Medjool Date Ooey Gooey Popcorn Balls

Ingredients:
- 1/2 cup old fashioned rolled oats
- 1/2 cup raw cashews or pecans
- 1 1/2 cup Natural Delights® Medjool dates, pitted and roughly chopped
- 2 tablespoons mesquite flour (or your favorite flour)
- 1 tablespoon cacao nibs
- 1 tablespoon chia seeds
- 2 cups popped salted popcorn (split)
- 2 tablespoons slivered or chopped almonds
- 1-2 tablespoons brown rice syrup or coconut nectar (if necessary)
- 1/4 teaspoon sea salt (optional)
Directions:
1. Combine oats and cashews in the bowl of a food processor and pulse for about 5 seconds to produce a rough meal. 2. Add Medjool dates to the bowl and pulse another 5 seconds. 3. Add the flour, nibs and chia seeds and one tablespoon syrup. Hit the pulse button a few times. 4. Add 1 cup of the popcorn and the almonds, pulse 1-2 times. 5. See if the mixture will hold together, if not add another tablespoon of the syrup pulse 1-2 times. 6. Pour mixture onto parchment paper and form into balls. Using your hands crush the remaining popcorn. Roll the balls into the crushed popcorn, you may need to gently press the popcorn into each of the balls. The popcorn can get soft so serve immediately!
