- 1 Box Vanilla Wafers
- 1 Cube Softened Butter
- 2 1/2 Cups Powdered Sugar
- 1 Tsp. Milk
- 1 Tsp. Vanilla
- 2 pounds Sliced Peaches
- Cool Whip
- Directions
- Crush vanilla wafers, spread all but 1/4 cup on bottom of a 9x13 pan. Mix the margarine, powdered sugar, milk and vanilla, drizzle over wafers, then layer peaches over that. Spread Cool Whip over peaches. Sprinkle remainder of wafers over top. Keep refrigerated.

Cucumber Melon Salad
Combine oil, lemon juice, salt, and pepper in a jar and shake. In a bowl, add thinly sliced cucumbers and bite-sized pieces of melon. Pour dressing over and toss salad. Cover and refrigerate. To serve: Put 2 pieces of lettuce on salad plate and spoon cucumber mixture on with slotted spoon. Makes 8 servings.
