Healthy Coconut Pudding
reduced flour to 1/4 cup flour, 1/4 cup sugar & stevia blend (makes it half the calories)
Mix ingredients together well in sauce pan, separate 3 eggs, (save whites of egg for whipping into marangue), mix 2 cups milk to egg yolks, stir into flour, sugar, cook being careful not to scorch until thick, add 1tablespoon coconut oil and some vanilla, beat eggs white fold into pudding, put in a pretty dish. Good with blueberries.
