Molded Citrus Salad
Soften the gelatin in 1/2 cup water and let sit for 15 minutes. Peel and slice oranges into small chunks. Reserve any juice. Squeeze the juice from the other orange. Pour the gelatin mixture into a double boiler (boil water in bottom section) and stir over medium heat until crystals dissolve. Add the orange juice, lemon juice, and vinegar. Pour the liquid into a bowl and let cool. Refrigerate until the liquid has begun to jell, about 30 minutes. Stir in the rest of the ingredients and pour into a 3-cup mold. Chill again until firm.
