- Spring Solanaceae Salad

- 1 1/2 lbs fingerling potatoes, cut into uniform chunks
- 1 pint whole cherry tomatoes
- 1/4 cup chopped l'itoi (or spring) onions
- 1/3 cup olive oil
- 2 crushed chiltepins
- Directions
- Heat the oven to 375 degrees. In a roasting pan, toss the potato chunks, tomatoes and onions with the olive oil. Sprinkle with crushed chiltepins. Roast uncovered for 30 minutes, stirring once or twice, until the potatoes are tender. Remove from the oven, cool and serve at room temperature.

Armenian Cucumber -- Tomato Salad
Peel and slice Armenian cucumbers. Place in a bowl and salt slightly, draining purged juices after resting for 5 minutes. Add tomatoes and pasilla pepper. In a separate bowl, combine basil, limejuice, sugar, vinegar and green onions. Season with salt and white pepper. Combine with cucumbers and tomatoes. Chill and serve.
