Sweet Potato Chowder

Ingredients:
- 12 oz bacon
- 1 small onion-diced
- 2 medium carrots-peeled and diced
- 2 tsp. chopped garlic
- 1 lb. sweet potatoes-peeled and diced
- 2 sprigs of rosemary-stem removed and chopped
- 1 tsp. fresh thyme leaves
- 1/2 tsp. salt
- 32 oz chicken stock
- 2 c corn-fresh or frozen
- 4 oz brussel sprouts- sliced thin
- 1/2 c. half and half
Directions:
Dice bacon and add to a stock pot. cook bacon until crisp. Remove from pan to a paper towel lined plate. Drain all but about 2 tbsp of bacon fat. Add in onions, carrots, and garlic. Saute until soft. Add in sweet potatoes, herbs, salt and stock. Bring to a boil and then reduce heat and simmer covered for 15 minutes or until potatoes are soft. Add in corn, brussel sprouts, bacon and half and half. Heat through, adjust seasoning, and serve.
