- Sweet Potato Chowder

- 12 oz bacon
- 1 small onion-diced
- 2 medium carrots-peeled and diced
- 2 tsp. chopped garlic
- 1 lb. sweet potatoes-peeled and diced
- 2 sprigs of rosemary-stem removed and chopped
- 1 tsp. fresh thyme leaves
- 1/2 tsp. salt
- 32 oz chicken stock
- 2 c corn-fresh or frozen
- 4 oz brussel sprouts- sliced thin
- 1/2 c. half and half
- Directions
- Dice bacon and add to a stock pot. cook bacon until crisp. Remove from pan to a paper towel lined plate. Drain all but about 2 tbsp of bacon fat. Add in onions, carrots, and garlic. Saute until soft. Add in sweet potatoes, herbs, salt and stock. Bring to a boil and then reduce heat and simmer covered for 15 minutes or until potatoes are soft. Add in corn, brussel sprouts, bacon and half and half. Heat through, adjust seasoning, and serve.

Pasta With Scallops and Lemon
In a 5-to-6-quart saucepan over high heat, bring about 4 quarts of water to a boil. Add penne and cook, stirring occasionally, until tender to bite, about 10 to 12 minutes, drain. Meanwhile, in a 10-to-12-inch frying pan over medium heat, stir onion and garlic in 2 tablespoons of the olive oil until limp, 3 to 5 minutes. Add lemon peel, lemon juice, 1 tablespoon of olive oil and scallops to the pan with the onion and the garlic. Bring to a simmer and cook until scallops are opaque, but still moist-looking in the center, about 6 minutes. Add pasta and basil to the scallop mixture and stir until heated through. Add salt and pepper to taste. Pour into wide, shallow pasta bowl to serve. Makes 4 servings.
