Swiss Chard Tacos

Ingredients:
- 1 1/2 Tbsp Olive Oil
- 1 Large Onion (cut into 1/4
- 3 Cloves Garlic, minced
- 1 tbsp Red Pepper Flakes
- 1/2 Cup Chicken Broth
- 1 Bunch Swiss Chard (stems removed), cut into 1 1/2
- 12 Corn Tortillas
- 1 Cup Crumbled queso Fresco Cheese
- 3/4 Cup Salsa
- 1 pound Meat (optional choice can include ground beef and/or chicken)
Directions:
Heat olive oil in skillet stir in onion cook until golden and softened, add garlic and red pepper flakes. Stir in chicken broth and chard. Cover reduce heat simmer 5 minutes. Remove lid increase heat and stirring until liquid evaporates remove from heat. In a dry skillet heated to med high warm tortillas 1 minute on each side. Fill with chard, and top with queso fresco and salsa.
