Farm Family Recipes

• 1 Large clove Garlic
• 1/2 Cup Lime juice
• 2 Tsp. Salt
• 1/2 Tbsp. Black pepper
• 1/4 Cup Olive oil
• 2 15 oz. cans Black beans, rinsed and drained
• 1 Cup Corn kernels
• 1/2 Large red or orange bell pepper
• 1/2 Cup Red onion, diced
• 1/2 Cup Chopped, fresh cilantro
• 2 Small avocados, diced

Gradually whisk olive oil, in a tiny steady stream, into other dressing ingredients that have been mixed together. Add to salad ingredients and chill for 2 hours before serving.
