Avocado Salad with Citrus Vinaigrette
  • 6 Tbsp. Olive Oil
  • 2 Tbsp. Fresh Lime Juice
  • 1 Pinch Salt
  • 1 Pinch Freshly Ground Black Pepper
  • 1 Clove Garlic, Minced
  • 1 Medium Naval Orange, Peeled and Sectioned
  • 1 Small Head Chicory
  • 2 Large Avocados, 1 Peeled and seeded and Cut in Half
  • 1 Small Red Onion, Thinly Sliced
  • 2 Tbsp. Chopped Fresh Cilantro
In a medium bowl, whisk together oil, lime juice, salt, pepper, and garlic. Add oranges and toss mix. Arrange lettuce leaves on 4 individual serving plates. Spoon the oranges over the lettuce, reserving the dressing and garnish with cilantro. Serve right away or chill briefly. makes 4 servings.
