Citrus Pilaf
  • 3/4 Cup Chicken broth
  • 1/2 Cup fresh orange juice
  • 1 Cup instant brown rice
  • 2 Scallions, minced
  • 1 Tsp ground ginger
  • 1/4 Cup Pine nuts, toasted
  • 2 Tsp grated orange zest
In a saucepan over medium-high heat, bring broth and juice to a boil. Stir in rice, scallions, and ginger. Reduce heat to low, cover and simmer 10 minutes. Stir in nuts and garnish with zest. Makes 4 servings.
