Lemon Pilaf
  • 3 Cups Cooked rice
  • 1 Cup Sliced celery
  • 1 Cup Chopped green onions
  • 2 Tbs Butter
  • 1 Tbs grated lemon rind
  • 1 Tsp salt
  • 1/4 Tsp Pepper
saute celery and onions in butter. Add rice, lemon rind, and seasonings and toss lightly. Continue cooking over low heat ( 2 minutes) until heated, stirring occasionally.
