Shrimp And Oranges
  • 1 Tbs olive oil
  • 2 Cloves garlic, minced
  • 2 Tsp. dried thyme
  • 1/4 Tsp. ground black pepper
  • pinch of crushed red pepper flakes
  • 1 lb. med. shrimp, peeled and devained
  • 1 Sweet red pepper, juilienned
  • 4 scallions, thinly sliced
  • 1 Cup orange segments
In a large bowl, combine oil, garlic, thyme, pepper and pepper flakes. Add shrimp and toss to coat. Cover and marinate at room temperature for 15 minutes. Stir fry in a large non-stick frying pan over medium heat for about 5 minutes. Remove shrimp with a slotted spoon. Add the red peppers and scallion. Continue to saute for 5 minutes. Stir in oranges. Return shrimp to pan and reheat. Serve immediately over rice or pasta. Serves 4.
