The Farmer’s Favorite Salad
Provided by:
Mary Jean Klingenberg, former Yuma cotton, alfalfa and produce farmer
Ingredients:
- 1 small bag Baby greens or Romaine lettuce
- 1/2 package spinach
- 1/2 cup dried cranberries
- 1 - 2 Asian Pears
- 1 small bag walnuts, chopped
- 1/4 - 1/2 cup crumbled bleu cheese
- 1/3 cup honey
- 1/3 cup vinegar
- 2 tsp Dijon mustard
- 1 tsp salt (or less)
- 3 tbsp onion, finely chopped
- 1 cup vegetable oil
- 2 tbsp poppy seeds
Directions:
For salad, mix together greens, spinach, dried cranberries, pears, walnuts, and crumbled bleu cheese.
For dressing, puree honey, vinegar, Dijon mustard, salt, and onion. Pour in vegetable oil and poppy seeds. Puree together. It is better to make the dressing ahead for time (even the day before serving) so the flavors can meld.
