Shrimp Ceviche
Provided by:
Desert Sweet Shrimp
Ingredients:
- 1 lb Desert Sweet Shrimp
- 6-8 lemons (juice of lemons)
- 1 lb tomatoes - 1/4 inch diced
- 1/4 cup celery - finely diced
- 1 or 2 jalapenos - small diced
- 1/2 cup red onion - finely diced
- 2 tblsp minced garlic
- 2 tblsp chopped cilantro
- 1/4 tsp black pepper
- 1 tblsp salt
Directions:
Thaw shrimp under cool rnning water, drop into boiling water for 1-2 minutes. Place in ice water, remove and mince. Mix the above ingredients and chill for 3-4 hours before serving. Goes great with fresh corn chips or on a tostada shell topped with sliced avocado.
