Armenian Cucumber — Tomato Salad

Ingredients:

2 Small Armenian Cucumbers
1 Pint Cherry Tomatoes cut in quarters
1 Teaspoon Pasilla Chile Pepper, seeded and Minced
1 Tablespoon Chopped Basil
1 Teaspoon Lime juice
Pinch of Sugar
1/2 Teaspoon Rice Wine Vinegar
2 Green Onions, Sliced Thin
Salt and Freshly ground White Pepper

Directions:

Peel and slice Armenian cucumbers. Place in a bowl and salt slightly, draining purged juices after resting for 5 minutes. Add tomatoes and pasilla pepper. In a separate bowl, combine basil, limejuice, sugar, vinegar and green onions. Season with salt and white pepper. Combine with cucumbers and tomatoes. Chill and serve.
