Avocado, Black Bean, & Corn Salad

Ingredients:
- 1 Large clove Garlic
- 1/2 Cup Lime juice
- 2 Tsp. Salt
- 1/2 Tbsp. Black pepper
- 1/4 Cup Olive oil
- 2 15 oz. cans Black beans, rinsed and drained
- 1 Cup Corn kernels
- 1/2 Large red or orange bell pepper
- 1/2 Cup Red onion, diced
- 1/2 Cup Chopped, fresh cilantro
- 2 Small avocados, diced
Directions:
Gradually whisk olive oil, in a tiny steady stream, into other dressing ingredients that have been mixed together. Add to salad ingredients and chill for 2 hours before serving.
Dressing Ingredients: garlic, lime juice, salt, black pepper, olive oil
