- Greek Cheese Pie

- 3 cups Flour
- 1 cup Warm Water
- 2 Tbsp Olive Oil
- 1/2 tsp Oregano
- dash Salt
- 2 Shallots, chopped
- 1/3 cup Parsley, fresh and finely chopped
- 2 cups Feta Cheese, crumbled
- 1/3 cup Romano Cheese, freshly grated
- 1/2 cup Heavy Cream
- 3 Eggs, beaten
- Salt, Pepper, Thyme to taste
- Directions
- For the dough: Mix the first five ingredients, knead for about 2-3 minutes, adding more flour if needed until dough doesn't stick to the hands. Divide into 3 equal parts. For the filling: Combine the remaining ingredients except the eggs. Heat until the cheese starts to melt. Allow to cook to room temperature, then mix in the beaten eggs. Lightly oil a 8x12 deep baking pan. Roll out the 3 dough balls so that each one is a bit bigger than the prepared pan. Place the first layer of dough in the pan, with ends hanging over the pan rim, add half the filling, follow in with the second dough layer, add the rest of the filling, finish off with the last dough layer, fold the dough layers together and crimp lightly. Pluck a few holes in the pie, making sure you go through the second layer of dough. Bake for about 45 minutes at 400 degrees.

Veal Chops With Blood Oranges
Melt 6 tablespoons of butter in a 12-inch non-reactive skillet over medium heat. Dredge chops in flour and place in the pan. Brown for 5 minutes, turn over and brown 5 minutes more. Lower the heat to medium-low and pour off the grease. Add the garlic, marjoram, and juice. Cover and cook 5 minutes. Uncover, turn chops over, re-cover and cook 5 minutes more. Remove chops from pan and keep warm. Rais heat and add remaining 2 tablespoons of butter and stir until it is mixed into the sauce. Pour over the chops and garnish with marjoram sprigs and orange zest. serve immediately. Makes 4 servings.
