Lamb Shish Kebab

Ingredients:
- 1/3 Cup Fresh lemon juice
- 3 Tbs virgin olive oil
- 1/3 Cup Minced Onion
- 4 cloves garlic, minced
- 1 Tbs freshly ground pepper
- 1 Tsp salt
- 1 1/2 lb. lamb sirloin roast, cut into 2-inch cubes
- 1 sm. red onion, cut into 8 wedges
- 1 sm. lemon, cut into 8 wedges
- 1 zucchini, cut into 8 wedges
Directions:
Combine lemon juice, oil, minced onion, garlic, pepper and salt in a small bowl. In a glass dish, place lamb and onions. Pour marinade over, cover and refrigerate at least 6 hours. Stir lamb occasionally. Drain and discard marinade. Thread onions, lamb, zucchini and a lemon wedge on a skewer. Barbecue over hot coals at least 6 minutes per side. Makes 4 servings.
