- Rainbow Chard, White Beans and Bacon Salad

- 4 slices bacon
- 1/2 onion, diced
- 1 can white beans, drained and rinsed
- 1 bunch rainbow chard, rinsed and chopped
- Directions
- Cook bacon until crispy, remove from skillet and drain. Cook diced inions until they start to carmalize. Add the white beans and the rainbow chard and continue cooking until chard is wilted. Dice bacon and add to the top just before serving.

Lemon Herbal Iced Tea
With vegetable parer, peel each lemon in a continuous spiral, removing only outer colored layer of peel. pour boiling water over tea bags and lemon peel. Cover and steep for 10 minutes. remove tea bags; chill tea mixture with peel in a covered container. To serve: Remove peel and pour over ice cubes in tall glasses. Sweeten with honey to taste. Garnish with lemon slices. This recipe can be substituted using oranges instead of lemons. Garnish with orange slices and fresh mint leaves. makes 8 servings.
