- Swiss Chard Tacos

- 1 1/2 Tbsp Olive Oil
- 1 Large Onion (cut into 1/4
- 3 Cloves Garlic, minced
- 1 tbsp Red Pepper Flakes
- 1/2 Cup Chicken Broth
- 1 Bunch Swiss Chard (stems removed), cut into 1 1/2
- 12 Corn Tortillas
- 1 Cup Crumbled queso Fresco Cheese
- 3/4 Cup Salsa
- 1 pound Meat (optional choice can include ground beef and/or chicken)
- Directions
- Heat olive oil in skillet stir in onion cook until golden and softened, add garlic and red pepper flakes. Stir in chicken broth and chard. Cover reduce heat simmer 5 minutes. Remove lid increase heat and stirring until liquid evaporates remove from heat. In a dry skillet heated to med high warm tortillas 1 minute on each side. Fill with chard, and top with queso fresco and salsa.

Lemon Salmon
Preheat grill for medium heat. In a shallow glass dish, mix the olive oil, parsley, thyme, rosemary, and garlic. Place the salmon in the dish, turning to coat. Squeeze lemon juice over each fillet. Cover and marinate in the refrigerator for 30 minutes. Lightly oil grill grate. Transfer salmon to the grill and discard any remaining marinade. Cook salmon on preheated grill over medium heat for 8 to 10 minutes, turning once. Fish is done when it flakes easily with a fork.
