- Tomato and Basil Pasta Salad

- 6 Large Ripe Tomatoes
- 1 Jar Non-peril capers (optional)
- 2 Garlic Gloves (minced)
- 2 Tablespoons Olive Oil
- 1 Lemon, Juiced
- 8 Basil Leaves, minced
- Salt to Taste
- 1 Package Penne Pasta (cooked)
- Directions
- Dice tomatoes and place in a large bowl. Add remainder of ingredients except for pasta. Cover and refrigerate for at least 30 minutes. (Longer the better) Add pasta and toss together. Serve and enjoy.

Hamburger, Broccoli, and Rice Casserole
Sauté beef and onions.
Cook broccoli just until fork tender
Mix together broccoli, rice, and soup.
In a 2 or 3 quart casserole, spread beef-onion mix. Top with slices of cheese. Spread with broccoli-rice mixture. Top with more sliced cheese.
Bake at 350 degrees until bubbly and cheese is melted.
I think this could be a great meatless dish using tuna instead of hamburger.
