Tortilla Quiche
Ingredients:
- 2 cups milk
- 5 eggs
- 2 cups mexican blended cheese
- 1 tbsp lemon/lime juice
- 1 can favorite green enchilada sauce
- lemon pepp
- 1 tbsp flour
- flour tort
Directions:
lightly fry flour tortillas to cover baking dish
Spray 13x9 dish and preheat oven to 350 degrees,
Line tortillas to cover bottom of 13x9.
In mixing bowl, blend whole eggs first, then add lemon/lime juice, lemon pepper, and milk while blending. Keep adding all ingredients, except for cheese, until well blended. Pour mixture to cover tortillas in 13x9. Sprinkle layer of cheese, then pour another layer of egg mixture. Top with cheese and enchilada sauce. Place in oven for 45+ minutes. Oven temps vary, so keep checking
