Arizona Quiche
  • 1, 9 inch pie shell
  • 1 pound ba strips cooked, crisp, crumbled bacon
  • 1 cup jack cheese
  • 1, 4 oz. can green chiles
  • 1, 13 oz. can evaporated milk
  • 3 thin-sliced green onions
  • 4 eggs, room temp
Directions
Sprinkle bacon, cheese, onion and chiles over bottom of the baked pie shell. Reserve some bacon, onion and chile for topping. Heat evaporated milk in measuring cup on high 2 1/2 to 3 minutes, or until hot. Pour hot liquid into egg mixture, stir well. Pour carefully into the pie crust. Sprinkle reserve bacon bits, onion and chiles over top. Cook on high for 7 minutes, until it appears barely set in center (like pudding). Allow to stand 10 minutes before serving.
